Oatmeal Raisin Cookies
INGREDIENTS:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon iodized salt
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 cup dark brown sugar, firmly packed
- 2 large eggs
- 2 teaspoons vanilla
- 1 1/2 ground cinnamon
- 3 cups oats (not instant)
- 1 1/2 cups raisins
DIRECTIONS:
- Beat butter and sugars until fluffy. Beat in egg and vanilla. Add combined flour, baking soda, baking powder, salt and cinnamon; mix well. Stir in oats and raisins.
- Drop by rounded tablespoonfuls onto ungreased cookie sheets.
- Bake 8-9 minutes for chewy; 10-11 minutes for crunchy cookies.
- Cool 1 minute on cookie sheet. Remove to wire rack.
- Store tightly covered.
