Oatmeal Raisin Cookies

My afternoon snack.

INGREDIENTS:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon iodized salt
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 cup dark brown sugar, firmly packed
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1 1/2 ground cinnamon
  • 3 cups oats (not instant)
  • 1 1/2 cups raisins

DIRECTIONS:

  1. Beat butter and sugars until fluffy. Beat in egg and vanilla. Add combined flour, baking soda, baking powder, salt and cinnamon; mix well. Stir in oats and raisins. 
  2. Drop by rounded tablespoonfuls onto ungreased cookie sheets. 
  3. Bake 8-9 minutes for chewy; 10-11 minutes for crunchy cookies.
  4. Cool 1 minute on cookie sheet. Remove to wire rack.
  5. Store tightly covered.
