Make atsuete oil by heating 4 tablespoon oil in a wok or pan. Add 2 tablespoons atsuete seeds and stir until oil turns red orange. Strain the oil and discard the seeds. Return the oil to the pan then saute 1/3 cup chopped onions until soft. Add 3 cups cooked rice and mix until all the grains are coated with the atsuete oil. Add 2 tablespoons tomato sauce and blend well. Season to taste. Add 2 tablespoons finely diced red bell pepper and cook for a minute more.
Makes 2-3 servings.
