At habang dahan-dahan na ninanamnam ng katawan ko ang caffeine ng kape ko… para akong na ha-high din. Hindi ko tuloy maiwasan ang masabi sa sarili ko ang mga katagang…”Uyeh! Layp is gud. Layp is beyotipol… dyas layk me.” Charot.

Kunsabagay, paano di sasarap ang kape ko eh may partner na freshly baked Marble Cake lang naman ako.

MARBLE CAKE

Yield Makes one 9-by-5-inch loaf

Ingredients

  • 1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
  • 1 3/4 cups cake flour (not self-rising)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 3 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2/3 cup buttermilk, room temperature
  • 1/4 cup plus 1 tablespoon Dutch-process cocoa powder

Directions

  1. Preheat oven to 350 degrees. Generously butter a 9-by-5-inch loaf pan; set aside. Whisk together the cake flour, baking powder, and salt; set aside.

  2. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating until combined after each addition and scraping down the sides of the bowl as needed. Mix in vanilla. Add flour mixture in 2 batches, alternating with the buttermilk and beginning and ending with the flour. Set aside 1/3 of the batter.

  3. In a bowl, mix cocoa and 1/4 cup plus 2 tablespoons boiling water with a rubber spatula until smooth. Add the cocoa mixture to the reserved cake batter; stir until well combined.

  4. Spoon batters into the prepared pan in 2 layers, alternating spoonfuls of vanilla and chocolate to simulate a checkerboard. To create marbling, run a table knife (or wooden skewer) through the batters in a swirling motion.

  5. Bake, rotating the pan halfway through, until a cake tester comes out clean, 40 to 50 minutes. Transfer pan to a rack to cool 10 minutes. Turn out cake from pan and cool completely on the rack. Cake can be kept in an airtight container at room temperature up to 3 days.

Black Magic Cake

Sa lahat na yata ng chocolate cake na nasubukan kong i-bake….etong Black Magic Cake na yata ang pinaka-paborito ko.

Malasa, malambot at hinding-hindi mahirap ang preparation ng batter. As in 15 minutes lang! So, dali-dali!

Hindi ko masyado ma-explain ng detalye ang kaibahan nya sa ibang chocolate cake pero sa palagay ko malaki ang papel ng one cup strong black coffee na isa sa sangkap nito. Palagay ko ang kape ang nagbigay ng kakaibang magic sa lasa ng keyk. :D

Take note sa mga…

Ingredients:

  • 1 3/4 cup All Purpose Flour
  • 2 c ups  Sugar
  • 3/4 cups Cocoa Powder
  • 2 tsp Baking Soda
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 2 Eggs
  • 1 cup  Strong black coffee, cooled
  • 1 cup Buttermilk
  • 1/2 cup Vegetable oil
  • 1 tsp Vanilla extract

Ang isa sa gusto ko pag gumagawa ako sa cake na ‘to ay yung wala masyadong effort na kailangan. Dahil siguro sa imbes na butter kasi eh vegetable oil ang kailangan na sangkap. Walang softening o melting-melting kembular of butter na minsan nakakapagod gawin.

At ang direction?

Directions:
1. Combine flour, sugar, cocoa, baking soda, baking powder, and salt in a large mixing bowl or stand mixer.
2. Add eggs, coffee, buttermilk, oil, and vanilla.
3. Beat at medium speed for two minutes. Batter will be thin.
4. Pour batter into a greased and floured 9×13 pan or two 9 inch cake pans.
5. Bake at 350 degrees for 35-40 minutes for a 9×13, or 30-35 minutes for layer pans.

Aktwali, ang recipe ng Black Magic Cake ay may kasamang Chocolate Frosting. Hindi ko na isinama kasi madalas wala akong nagagawang frosting sa cake na ‘to. Takam na kasi kami agad. At wa na kami pakels kahit walang frosting. Agad-agad ang lafang.

9×13 pan or two 9 inch cake pans?  Wala ako nyan na mga baking pans. Madalas sa isang round baking dish ko sya nilalagay para i-bake.

Hindi ko na mabilang kung ilang beses na ako nagbake nito kasi ipinang-memeryenda namin ‘to pag weekend. Ni minsan hindi rin ako napalpak sa recipe na ‘to. :D

Next time, pipilitin ko na magpigil at pipilitin kong malagyan muna ‘to ng frosting bago namin lantakan. Eh kasi naman, kahit walang frosting ang Black Magic Cake na itey….panalo na talaga.

Bagong Bundt Pan

May bago akong nabiling Silicone Bundt Pan dito sa may amin sa tabi-tabi lang sa halagang wan pipti (P150.00). Siempre, dahil bago, excited akong gamitin. Kelangan mabinyagan na agad ‘kako. Kaya nanghalungkat ako ng recipe ng Bundt Cake sa internet.

Hanep sa kulay ng bundt pan ko – neon green! Kalurkey! Eto na lang kasi ang natirang kulay.

Heniweys, naghanap nga ako ng bundt recipe at gusto ko yung simple lang dahil gusto ko lang i-try ‘tong bago kong gamit. At may nakita naman agad ako.

Napakadaling gawin, ni hindi ko na ginamitan ng electric mixer.

Pero aminado akong hindi  pa rin expert sa pagbi-cake at alam kong marami pa akong dapat matutunan. Medyo nagulat kasi ako dito sa pagtubo ng cake. Parang ang OA! Lol!

Hindi ko alam kung “excited” lang ang Baking Powder at masyadong syang umalsa. Eh one teaspoon baking powder lang naman ang nilagay ko. Hindi kaya dahil sa wire whisk at hindi electric mixer ang ginamit ko kaya nagkaganito? :D May konek kaya yun?

Natawa ako sa sinabi ng niece kong si Tweetums habang nilalagyan ko ng chocolate frosting at binudburan ng chocolate chips ang bundt cake ko.  Biro nya, parang isang malaking DONUT daw ang chura! Hahaha!

Banana Chocolate Cupcake

Nagpanic ako ng makita ko ‘tong overripe bananas.

O sha sha! Exajs lang. Ang totoo ay hindi ako nagpanic.

Namigay kasi si Neighborhood ng saging noong Lunes. Hindi namin kinaya ng anakis ko ang ubusin agad lahat-lahat hanggang sa inaabutan na tuloy kami ng pangingitim ng balat ng prutas. Pero hindi pa naman sya nabubulok o lamog ang laman. Kumbaga eh gumagapang pa lang papuntang pagkalamog si bananas. Lol!l

Nanghinayang akong itapon ang mga bananas. Ang panghihinayang kong ‘to ang nagtulak sa akin para gumawa agad-agad ng 12 Banana Chocolate Cupcakes.

Nagkaroon tuloy kami ng instant pang-meryenda sa hapon nang dahil sa mga nag-aapurang saging na itey.

Banana Chocolate Cupcakes:

  • 1 cup white sugar
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder (regular or Dutch-processed)
  • 3/4 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup mashed ripe bananas 
  • 1/2 cup warm water
  • 1/4 cup milk
  • 1/4 cup canola, corn, or vegetable oil
  • 3/4 teaspoon vanilla extract
  1. Preheat oven to 350 degrees F
  2. In a large bowl whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another large bowl, whisk together the egg, mashed banana, water, milk, oil, and vanilla extract. Add the wet ingredients to the dry ingredients and stir, or whisk, until combined. (The batter is quite thin.) Pour or scoop the batter into the muffin cups, about 3/4 full, and bake for about 20 minutes or until a toothpick inserted in the center of a cupcake comes out clean.  Makes 12 regular cupcakes.

Napaha-humble ng tsura ng cake na ‘to. Again, it’s so simple pero it taste so good talaga.

Read nyo ang ingredients at ang paraan sa paggawa. Ang super-dali lang!

Simple Almond Cake

  • 3/4 cup sugar
  • 3/4 cup flour
  • 1/2 cup butter, melted
  • 1 tsp. almond extract
  • 1 tsp. baking powder
  • 2 eggs
  • slivered almonds

Mix sugar, flour, butter, almond extract, and eggs on high for 3 minutes. Pour into greased pie pan. Sprinkle with slivered almonds. Bake at 350 for 25 minutes.

Egg Muffins Sa Almusal

Kahit madalas ay sinusumpong ako ng katamaran sa pagluluto, impernes naman sa akin, matutuwa ka pag sinusumpong ako ng kasipagan.

Pag may sumpong akong magsipag, ginagawa kong kumplikado ang isang pagluluto na kung tutuusin ay napaka-simple lang naman. Parang tanga lang noh?

Ewan ko ba, para akong adik. Minsan ay gusto kong pahirapan ang sarili ko sa mga trip ko. 

Gaya na lang netong ginawa kong EGG MUFFINS chaharat na ‘to.

Imbes na i-pan fry lang ang vienna sausage o kaya i-scramble ang mga betlogs sa simpleng paraan para sa almusal namin, eto…nag-inarte ako.

Ginawan ko ng ibang twist. (O ha!! may twist-twist pa akong nalalaman ha! Neknek ko!)

Recipe: Cookies & Cream No-Bake Cheesecake

Ginawa ko ‘to noong nag-Sweet Sixteen ang unica hija ko last March 15.

Kung bibili o kaya o-order ako ng mga ganito kalaking cheesecake sa labas, mahigit P500 ang tiyak na presyong babayaran ko. Nanghinayang at nagtipid ang Mamaru, kaya minabuting gumawa na lang ng homemade birthday cake para sa anakis kasi more or less P300 lang ang gagastusin sa mga ingredients.

Cookies and Cream No-Bake Cheesecake

Makes one 8 inch cheesecake.

Ingredients:

Crust:

  • 1 1/2 cup crushed graham cracker
  • 1/4 cup packed light brown sugar
  • 7 tablespoon unsalted butter(melted)

Cheesecake:

  • 2 cups all-purpose cream
  • 1 bar cream cheese, softened
  • 2/3 cup white sugar
  • ½ teaspoon salt
  • 1 tablespoon lemon juice
  • ¾ cups cookies (Oreo), crushed

Instructions:

Crust:
1. Combine graham cracker crumbs with sugar.
2. Add melted butter and blend until combined.
3. Press into pan. Set aside.

Cheesecake:
1. Beat heavy cream until medium peaks form. Set aside.
2. Add cream cheese, sugar, salt, lemon juice to a bowl and beat with a paddle attachment until smooth (approximately 3-5 mins). If you do not have a stand mixer or a paddle attachment a hand beater will work as well, but will take twice as long to achieve a smooth consistency.
3. Add cream cheese mixture to heavy cream and beat until incorporated.
4. Gently fold in cookies.
5. Fill springform pan.
6. Refrigerate for at least 6 hours to set or overnight for best results.
7. Serve with whipping cream and garnish with mini cookies.

Carrot Cake with Buttercream Frosting

CARROT CAKE with BUTTERCREAM FROSTING

Ingredients:

  • 1 1/2 Cup All-Purpose Flour
  • 11/8 Cup White Sugar
  • 1/3 Cup Brown Sugar
  • 2 Cups Shredded Carrot
  • 1/2 Cup Crushed Pineapple
  • 2 Eggs, Lightly Beaten
  • 1/2 Cup Oil
  • 1 Tsp Vanilla
  • 1 1/4 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1/2 Tsp Ground Cinnamon
  • 1/2 Tsp Nutmeg
  • 1/4 Tsp Ground Ginger

Method:

  1. Beat eggs, add white and brown sugar until smooth.
  2. Mix oil and vanilla.
  3. Fold in carrots and drained pineapple to the mixture. Set aside.
  4. In a separate bowl, mix flour, baking soda, baking powder, salt and spices.
  5. Mix dry ingredients into carrot mixture until just moistened.
  6. Do not overmix.
  7. Fold in nuts if desired.
  8. Pour into prepared baking pan.
  9. Bake for 20-25 minutes.

BUTTERCREAM FROSTING:

Whisk together in a saucepan 5 Tbsp flour and a cup of milk. Cook over medium heat until starting to thicken and cook for a minute or two more– don’t let it get too thick or it will be too stiff when it cools.

Beat together a cup of unsalted butter and a cup of granulated sugar until light in an electric hand mixer or stand mixer. Beat in the cooled flour and milk mixture. Add 1-2 tsp vanilla and beat some more until it’s light and creamy.

Since kami lang ni Sang ang madalas na naiiwan sa bahay, tig-isa kami neto.

Kaso BIG BAWAL sa doggies ang chocolates o mga pagkain na may chocolate, dats why nag-muwestra si Sang, give na lang daw nya sa akin ang share nya. Charot! :P

Since sa microwave ibe-bake ‘tong mga babies, rekomendado na silicon cupcake molder ang gamitin. Pero kung wala ka naman silicon molder, eh may magagawa ba ako kung wala? Problema mo na yun. Lol!

Choco Cupcakes For Two

Ingredients:

  • 2 Tbsps. All-purpose flour
  • 2 Tbsps. Brown sugar
  • 4 ½ Tsps. Unsweetened cocoa powder
  • 1/8 Tsps. Ground cinnamon
  • 4 ½ Tsps. Milk
  • 1 ½ Tbsps Butter, melted
  • ½ egg, lightly whipped (approx 2 Tbsps whipped egg)

Procedure:

  1. Whisk flour, brown sugar, cocoa powder and cinnamon in a small bowl.
  2. Mix in milk, butter, and egg.
  3. Divide evenly between two silicone cupcake liners.
  4. Microwave on medium for one minute and 30 seconds. If the cupcakes do not bounce back when lightly touched, repeat this step.

Recipe: Microwave Choco Cup Cake

Masarap na mahirap ang maging babae. Sa loob ng isang buwan, may mga sunod-sunod na araw na ang init ng ulo ko sa hindi maipaliwanag na kadahilanan.

Guys, wag na ipagtaka kung minsan ay parang si Corazon (Ang Unang Aswang) ang peg naming mga babae. Kahit mababait kami, may pagkakataon talaga na kusang lumalabas ang mga pangil namin at biglang nagiging aswang. Hehe! Ganun lang talaga ang mga tunay na babae, BITCHESA minsan ang pag-uugali. Kunsabagay, diyan naman kasi kami “SUMASARAP”, sa pagiging unpredictable namin, di ba? (Ang hindi mag-agree, tutubuan ng pigsa sa dila. Pramis.)

Hindi lang yan. May times din na kung makapag-crave kami ng pagkain, susme, talo pa ang babaeng nagbubuntis. (*sume-segway na ang Mamaru)

Noon isang araw lang, chura lang ng naglilihi. Naglaway ako ng todo at gusto kong lumafang ng chocolate cake. And since wala naman akong mapaglambingan at di naman afford ng lola nyo ang magpabili ng kahit half choco roll lang sa Red Ribbon, ginawan ko na lang ng paraan ang paglalaway ko.

Salamat sa microwave oven namin. Eto, Microwave Choco Cup Cake ang naging sagot sa nag i-inarteng pakiramdam ko.

Ingredients: (makes 1 Cup Cake)

  • 3 Tbsp All-Purpose Flour
  • 1/2 Tsp Vanilla Extract
  • 1/4 Tsp Cinnamon powder (Optional)
  • 1/4 Tsp Baking Powder
  • 2 Tbsp Sugar
  • 2 Tbsp Ordinary Cocoa Powder
  • 1 Egg
  • 2 Tablespoons Oil
  • 2 Tablespoons Milk

Preparation

  1. Combine and whisk all ingredients together in a bowl. Pour content in a coffee mug or cup.
  2. Cook for about 2.5 – 3 minutes on full power in microwave.
  3. Dust confectioner sugar to serve.
