Banana Cake

Now na!”

FUDGE CAKE

Ingredients:

  • 4-1/2 oz. (1 cup) all-purpose flour
  • 1 oz. (1/4 cup plus 2 tablespoons) unsweetened natural cocoa powder (not Dutch processed)
  • 1/2 tsp. baking soda
  • 1/4 tsp. table salt
  • 4 oz. (1/2 cup) unsalted butter, melted and warm
  • 1-1/4 cups packed light brown sugar
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 1/2 cup hot water

Procedure:

Position a rack in the lower third of the oven and heat the oven to 350 F. Grease the bottom of an 8×2- or 9×2-inch round cake pan or line it with parchment.

In a small bowl, whisk the flour, cocoa powder, baking soda, and salt. Sift only if the cocoa remains lumpy after whisking. In a large bowl, combine the melted butter and brown sugar with a wooden spoon or rubber spatula. Add the eggs and vanilla; stir until well blended. Add the flour mixture all at once and stir just until all the flour is moistened. Pour the hot water over the batter; stir just until it’s incorporated and the batter is smooth. Scrape the batter into the prepared pan. Bake until a toothpick inserted in the center comes out clean, about 30 minutes for a 9-inch pan; 35 to 40 min. for an 8-inch pan. Let cool in the pan on a rack for 10 min.

MARBLE CAKE

Yield Makes one 9-by-5-inch loaf

Ingredients

  • 1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
  • 1 3/4 cups cake flour (not self-rising)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 3 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2/3 cup buttermilk, room temperature
  • 1/4 cup plus 1 tablespoon Dutch-process cocoa powder

Directions

  1. Preheat oven to 350 degrees. Generously butter a 9-by-5-inch loaf pan; set aside. Whisk together the cake flour, baking powder, and salt; set aside.

  2. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating until combined after each addition and scraping down the sides of the bowl as needed. Mix in vanilla. Add flour mixture in 2 batches, alternating with the buttermilk and beginning and ending with the flour. Set aside 1/3 of the batter.

  3. In a bowl, mix cocoa and 1/4 cup plus 2 tablespoons boiling water with a rubber spatula until smooth. Add the cocoa mixture to the reserved cake batter; stir until well combined.

  4. Spoon batters into the prepared pan in 2 layers, alternating spoonfuls of vanilla and chocolate to simulate a checkerboard. To create marbling, run a table knife (or wooden skewer) through the batters in a swirling motion.

  5. Bake, rotating the pan halfway through, until a cake tester comes out clean, 40 to 50 minutes. Transfer pan to a rack to cool 10 minutes. Turn out cake from pan and cool completely on the rack. Cake can be kept in an airtight container at room temperature up to 3 days.

Black Magic Cake

As in 15 minutes lang! So, dali-dali!

 balck magic cake-005

Take note sa mga

Ingredients:

  • 1 3/4 cup All Purpose Flour
  • 2 c ups  Sugar
  • 3/4 cups Cocoa Powder
  • 2 tsp Baking Soda
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 2 Eggs
  • 1 cup  Strong black coffee, cooled
  • 1 cup Buttermilk
  • 1/2 cup Vegetable oil
  • 1 tsp Vanilla extract

eeggsegg

Walang softening o melting-melting kembular of butter na minsan nakakapagod gawin.

At ang direction?

Directions:
1. Combine flour, sugar, cocoa, baking soda, baking powder, and salt in a large mixing bowl or stand mixer.
2. Add eggs, coffee, buttermilk, oil, and vanilla.
3. Beat at medium speed for two minutes. Batter will be thin.
4. Pour batter into a greased and floured 9×13 pan or two 9 inch cake pans.
5. Bake at 350 degrees for 35-40 minutes for a 9×13, or 30-35 minutes for layer pans.

Prep Time:     15 Min
Cook Time:     40 Min

9×13 pan or two 9 inch cake pans?

balck magic cake-004

Post ako ulit ng BLack Magic Cake with frosting next time! Babosh!

HAPPY WEEKEND EVERYONE! :D
