Recipe: No-Bake Blueberry Cheesecake

Blueberry Cheesecake ang request na ipagawa sa akin ni Kevin noong New Year pa. Nabili ko ang mga ingredients maliban lang sa isa. Ang cream cheese! Ewan ko ba, as in nagkaubusan talaga ng cream cheese sa mga tindahan noong Bagong Taon.

Pinangako ko sa kanya, sa bertdey ko na lang sya gawan ng request nya. 

At noong Wednesday, bertdey ng junakis ko kaya I did this for him.

No-Bake Blueberry Cheesecake ingredients

NO-BAKE BLUEBERRY CHEESECAKE
Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon nutmeg
  • 1 tablespoon sugar
  • 1/2 cup softened butter
  • 1 teaspoon lemon juice (optional)

Filling:

  • 1 cup (1 brick) cream cheese
  • 1 cup (1 brick) all purpose cream
  • 1/2 cup sugar
  • 3 tablespoons liquid milk
  • 1 tablespoon or 1 sachet of Knox unflavored gelatin
  • 1 teaspoon lemon juice (optional)

Topping:

  • 1 can Comstock Blueberry pie filling

No-Bake Blueberry Cheesecake 

To prepare crust:

  • Crush graham crackers.
  • Mix all dry ingredients. Add butter to bind. Mash well.
  • Transfer and press evenly on bottom of ungreased springform pan.
  • Place in the freezer to harden crust.

To prepare filling:

  • Using a mixer, whip chilled cream with 2 tablespoon sugar until stiff. Set aside.
  • In a separate bowl, gradually mix remaining sugar into softened cream cheese. Beat until fluffy and set aside.
  • In a small sauce pan, combine milk and gelatin powder. Heat until completely dissolved. Remove from heat, pour and beat into cream cheese mixture.
  • Fold in cheese mixture to the whipped cream and beat on medium to high.
  • Add lemon juice to add some zest in your cream filling.

To assemble:

  • Bring out pan from freezer and pour in the cheesecake filling. Spread evenly.
  • Cover pan and chill.
  • Top with blueberry pie filling or fruit compote before serving.

Wala akong mabiling Graham crumbs kaya ginamitan ko ng food processor ang pagdurog ng crackers. Hindi lang yung pagdurog ng crackers ng pinong-pino ang kinarir ko. Pati yung pagporma ng crust sa springform, kinarir ko rin. Para hindi sabog-sabog ang crust pag ini-slice.

Hindi ‘to ang first time na gumawa ako ng cheesecake at napag-alaman ko na mas OK kung huwag muna ilagay ang toppings habang chini-chill sa ref. May tendency kasi na mag-dry at umitim ang toppings.

Tsaka na lang maglagay ng toppings kung ise-serve na.

May iba kasi na gusto nila ng cheesecake na plain lang…nakahubad o naka- “topless”. 😀

My only bigatin son Kevin is turning 18 on sunday, February 22. Pero kagabi ay inimbita ko na ang magagandang lahi/miyembro ng angkan ko for a dinner dito sa bahay. Hindi ko na hinintay ang sunday kasi sinasamantala ko na andito sa Iligan City si Evan, brother ko.
