Recipe: Cookies & Cream No-Bake Cheesecake

Ginawa ko ‘to noong nag-Sweet Sixteen ang unica hija ko last March 15.

Kung bibili o kaya o-order ako ng mga ganito kalaking cheesecake sa labas, mahigit P500 ang tiyak na presyong babayaran ko. Nanghinayang at nagtipid ang Mamaru, kaya minabuting gumawa na lang ng homemade birthday cake para sa anakis kasi more or less P300 lang ang gagastusin sa mga ingredients.

Cookies and Cream No-Bake Cheesecake

Makes one 8 inch cheesecake.

Ingredients:

Crust:

  • 1 1/2 cup crushed graham cracker
  • 1/4 cup packed light brown sugar
  • 7 tablespoon unsalted butter(melted)

Cheesecake:

  • 2 cups all-purpose cream
  • 1 bar cream cheese, softened
  • 2/3 cup white sugar
  • ½ teaspoon salt
  • 1 tablespoon lemon juice
  • ¾ cups cookies (Oreo), crushed

Instructions:

Crust:
1. Combine graham cracker crumbs with sugar.
2. Add melted butter and blend until combined.
3. Press into pan. Set aside.

Cheesecake:
1. Beat heavy cream until medium peaks form. Set aside.
2. Add cream cheese, sugar, salt, lemon juice to a bowl and beat with a paddle attachment until smooth (approximately 3-5 mins). If you do not have a stand mixer or a paddle attachment a hand beater will work as well, but will take twice as long to achieve a smooth consistency.
3. Add cream cheese mixture to heavy cream and beat until incorporated.
4. Gently fold in cookies.
5. Fill springform pan.
6. Refrigerate for at least 6 hours to set or overnight for best results.
7. Serve with whipping cream and garnish with mini cookies.

CARROT CAKE with BUTTERCREAM FROSTING

Ingredients:

  • 1 1/2 Cup All-Purpose Flour
  • 11/8 Cup White Sugar
  • 1/3 Cup Brown Sugar
  • 2 Cups Shredded Carrot
  • 1/2 Cup Crushed Pineapple
  • 2 Eggs, Lightly Beaten
  • 1/2 Cup Oil
  • 1 Tsp Vanilla
  • 1 1/4 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1/2 Tsp Ground Cinnamon
  • 1/2 Tsp Nutmeg
  • 1/4 Tsp Ground Ginger

Method:

  1. Beat eggs, add white and brown sugar until smooth.
  2. Mix oil and vanilla.
  3. Fold in carrots and drained pineapple to the mixture. Set aside.
  4. In a separate bowl, mix flour, baking soda, baking powder, salt and spices.
  5. Mix dry ingredients into carrot mixture until just moistened.
  6. Do not overmix.
  7. Fold in nuts if desired.
  8. Pour into prepared baking pan.
  9. Bake for 20-25 minutes.

BUTTERCREAM FROSTING:

Whisk together in a saucepan 5 Tbsp flour and a cup of milk. Cook over medium heat until starting to thicken and cook for a minute or two more– don’t let it get too thick or it will be too stiff when it cools.

Beat together a cup of unsalted butter and a cup of granulated sugar until light in an electric hand mixer or stand mixer. Beat in the cooled flour and milk mixture. Add 1-2 tsp vanilla and beat some more until it’s light and creamy.

Kaso BIG BAWAL sa doggies ang chocolates o mga pagkain na may chocolate, dats why nag-muwestra si Sang, give na lang daw nya sa akin ang share nya. Charot! 😛

Since sa microwave ibe-bake ‘tong mga babies, rekomendado na silicon cupcake molder ang gamitin. Pero kung wala ka naman silicon molder, eh may magagawa ba ako kung wala? Problema mo na yun. Lol!

Choco Cupcakes For Two

Ingredients:

  • 2 Tbsps. All-purpose flour
  • 2 Tbsps. Brown sugar
  • 4 ½ Tsps. Unsweetened cocoa powder
  • 1/8 Tsps. Ground cinnamon
  • 4 ½ Tsps. Milk
  • 1 ½ Tbsps Butter, melted
  • ½ egg, lightly whipped (approx 2 Tbsps whipped egg)

Procedure:

  1. Whisk flour, brown sugar, cocoa powder and cinnamon in a small bowl.
  2. Mix in milk, butter, and egg.
  3. Divide evenly between two silicone cupcake liners.
  4. Microwave on medium for one minute and 30 seconds. If the cupcakes do not bounce back when lightly touched, repeat this step.

Recipe: Microwave Choco Cup Cake

Masarap na mahirap ang maging babae. Sa loob ng isang buwan, may mga sunod-sunod na araw na ang init ng ulo ko sa hindi maipaliwanag na kadahilanan.

Guys, wag na ipagtaka kung minsan ay parang si Corazon (Ang Unang Aswang) ang peg naming mga babae. Kahit mababait kami, may pagkakataon talaga na kusang lumalabas ang mga pangil namin at biglang nagiging aswang. Hehe! Ganun lang talaga ang mga tunay na babae, BITCHESA minsan ang pag-uugali. Kunsabagay, diyan naman kasi kami “SUMASARAP”, sa pagiging unpredictable namin, di ba? (Ang hindi mag-agree, tutubuan ng pigsa sa dila. Pramis.)

Hindi lang yan. May times din na kung makapag-crave kami ng pagkain, susme, talo pa ang babaeng nagbubuntis. (*sume-segway na ang Mamaru)

Noon isang araw lang, chura lang ng naglilihi. Naglaway ako ng todo at gusto kong lumafang ng chocolate cake. And since wala naman akong mapaglambingan at di naman afford ng lola nyo ang magpabili ng kahit half choco roll lang sa Red Ribbon, ginawan ko na lang ng paraan ang paglalaway ko.

Salamat sa microwave oven namin. Eto, Microwave Choco Cup Cake ang naging sagot sa nag i-inarteng pakiramdam ko.

Ingredients: (makes 1 Cup Cake)

  • 3 Tbsp All-Purpose Flour
  • 1/2 Tsp Vanilla Extract
  • 1/4 Tsp Cinnamon powder (Optional)
  • 1/4 Tsp Baking Powder
  • 2 Tbsp Sugar
  • 2 Tbsp Ordinary Cocoa Powder
  • 1 Egg
  • 2 Tablespoons Oil
  • 2 Tablespoons Milk

Preparation

  1. Combine and whisk all ingredients together in a bowl. Pour content in a coffee mug or cup.
  2. Cook for about 2.5 – 3 minutes on full power in microwave.
  3. Dust confectioner sugar to serve.

Chocolate Cupcakes

Today is November 10. Hindi ko makakalimutan, napaka-espesyal at sobrang memorable sa akin ang petsa na ‘to. Kagabi ko pa iniisip kung paano ko gugunitain ang araw na ‘to. Well, after saying a little prayer of thanks kaninang umaga, naisipan ko na alalahanin ko na lang siguro ang araw na ‘to sa pamamagitan ng pagbe-bake ng cupcakes.

At kung anong okasyon at kung anong meron sa araw na ‘to – eh sekreeeeeeeet! Charot!

Medyo excited din ako habang nagbe-beyk kanina kasi pers taym ko na nagamit ang 10 pieces of Wilton silicon cupcake molder na inarbor ko galing sa pamangkin kong si Gay na lumayas na papuntang Vancouver.

Super-like ko ang kulay ng mga molder. Parang mga tsokolate rin. (Paging Gay! Padalhan mo pa ako ng mga silicon molders, langga ha!? 😛 )

Hindi na ako gumawa ng frosting/icing kasi sandosena lang naman ang bineyk kong cupcakes. Mga ilang oras lang inabot ng mga cupcakes at sinentensyahan na rin agad namin nina Kevin at Keziah.

CHOCOLATE CUPCAKES

Ingredients:

  • 1 cup all purpose flour
  • 1 cup plus 2 tablespoons sugar
  • 1/3 cup plus 2 tablespoons Cocoa Powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted and warm
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup hot water

Procedure:

  • Preheat the oven to 350 degrees. In a large mixing bowl, mix the flour, cocoa powder, sugar, baking soda, and salt together thoroughly.
  • Add the butter, eggs, and vanilla and beat on medium speed for one minute.
  • Add half of the water and beat for 20 seconds. Add the remaining water. Beat for 20-30 seconds until the batter is smooth. Pour and divide it evenly among the 12 lined cups. Bake 18-22 minutes.

Super Moist Chocolate Cake

The other week, naglaway ang bagets kong si Kevin sa Triple Chocolate Roll ng Red Ribbon nang makita nya ang Ad sa TV. Since hindi maibili ng nagmamagandang nanay ang anak ng keyk, ipinag-beyk ko na lang siya ng choco cake.

Lumang recipe ‘to na natutunan ko way back 1996, doon sa cooking class na pinasukan ko.

SUPER MOIST CHOCOLATE CAKE

Pre-heat oven 350F Prepare 2 pans lined with wax paper. Set aside.

  • 3/4 cup sifted cocoa
  • 1 1/3 cup water
  • 1 teaspoon vanilla

1/2 teaspoon brown food color

Mix all together. Then add,

  • 3/4 cup melted butter
  • 3 whole eggs
  • 2 1/4 cup cake flour
  • 2 teaspoon baking powder
  • 1 1/4t baking soda
  • 1 3/4 cup sugar

Beat all ingredients in one bowl at medium or high speed of the mixer for 5 minutes. Pour into 2 pans and bake 25-30 minutes or until a toothpick inserted in center comes out clea. Cool completely.

FILLING

  • 1 egg yolk
  • 1 tablespoon cornstarch
  • 1/4 cup condensed milk
  • 1/2 cup fresh milk
  • 1/4 cup butter
  • 1 teaspoon vanilla

Cook in a double boiler with continuous stirring.

FROSTING

  • 2 tablespoon all purpose flour
  • 1 cup fresh milk
  • 1 tablespoon cornstarch
  • 1/2 cup condensed milk
  • 1 teaspoon vanilla
  • 1/4 cup cocoa
  • 1/2 baking soda
  • 2 tablespoon oil

Cook over a double boiler until creamy. Spread on while hot.

Siempre, proven ko na yummylicious ang recipe na ‘to.  Madalas din ‘tong lutuin ng ate ko.

Wish ko lang eh naipatikim ko ‘tong bineyk ko sa lalaking tanging CHOCO CAKE lang daw ang gusto nyang kainin sa lahat-lahat ng sandamakmak na cake sa mundo.  Itago na lang natin yung lalaki sa pangalan na Kups. Hays…kung batid lang sana nya na mas masarap ako kesa dito sa CHOCO CAKE na ‘to, tinitiyak ko sa kanya, titirik mata nya sa sarap. Wahaha! Aym so landiiii! Charot!

Gamit ang Pancake Mix na ginawa ko in my previous post, pinahirapan ko lang naman ang sarili ko noong Sunday nang ginawan ko ng meryendang Pancakes ang mga amo ko.

Bukod sa mas masarap (ng triple) ang Pancake Mix ko kumpara dun sa nakasanayang commercial mix na naka-box, eh sulit ang pagtitiyaga ko kasi natuwa ang mga amo ko sa flower shape ng mga pancakes. Minsan, yun lang naman ang kunswelo ng mga nanay na gaya ko, ang makitang bentang-benta sa pamliya ang niluluto.

Napaka-lukaret ko talaga. Ginawa kong kumplikado ang paraan ng napakasimpleng pagluluto ng Pancakes. Imbis na yung usual non-stick pan ang gamitin, yung flower-shaped egg molder ang ginamit ko. Lol! Wala lang, trip-trip lang.

Homemade Yellow Cake Mix

Gusto ko ‘to!

Hindi gaya ng mga naka-box na yellow cake mix na nabibili commercially, mas ayos to kasi walang halong preservatives, additives, artificial coloring at kung anik-anik pa. Higit sa lahat, mas moneysaver ‘to.

Pwedeng gawin ang mixing in advance. Isupot o ilagay sa isang airtight container at gamitin kung kelan gusto. Mga buwan din ang itatagal ng cake mix na ‘to, mga palangga.

3 cups all-purpose flour
2 cups sugar
1 tablespoon baking powder
1/2 cup non-fat dry milk

Combine flour, sugar, baking powder, and non-fat dry milk.

At para sa paggawa ng basic yellow cake, sundin ang mga sumusunod:

1 recipe Homemade Yellow Cake Mix
1 1/4 cups water
1 1/2 teaspoons vanilla
1/2 cup butter, softened
3 eggs

Place Homemade Yellow Cake Mix in a bowl. Add water, vanilla, butter, and eggs. Combine with an electric mixer then beat two more minutes. Pour into a greased and floured cake pan. Bake at 350-degrees.

One Egg Lemon Pound Cake

Makahulugan sa akin ang petsa noong Lunes, August 8. At para mas lalong maging markado sa akin ang petsa, gumawa ako ng FIRST Lemon Pound Cake ko.

Pers taym ko nagamit ang silicone loaf pan na nabili ko ON SALE last Christmas. The recipe calls for 8×4 inch loaf pan. Malaki ang loaf pan na nabili ko size 9×5 kaya nagmistulang kakarampot ang chura ng cake sa loob ng pan.

Doon sa pinagkunan ko ng recipe, hindi sinabing lagyan ng lemon glaze. Eh sinipag ako at nilagyan ko pa rin ng glaze. Nagsisi lang naman ang Mamaru! Sobrang tamis kasi ng glaze at di ko kinaya. Eh may lahing-diabetic pa naman ang magandang lahi namin. Chos!

Inalis ko talaga ang glaze nung lumafang aketch ng cake.

Next time, I’ll leave it plain and simple lang ang Lemon Pound Cake ko. Minsan nasa kasimplehan lang talaga ang sarap ng buhay. Hindi na kelangan ang daming cheche-bureche.

Lemon Pound Cake

Pagpasensyahan nyo na ang mga pics. Bomalabs sya. Gabi na kasi nung kinunan ko. Pag may mga ganitong anggulo ng shot akong gustong kunan…eh abot hanggang langit talaga ang wish ko na sana may DSLR ako.

Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 cup white sugar
  • 1 teaspoon salt
  • 1/2 cup butter
  • 1 egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract
Directions
  1. Preheat oven to 350 degrees F (175 degrees C) grease and flour an 8×4 inch loaf pan.
  2. In a large bowl, mix flour, baking powder, sugar and salt. Cut in butter. Break 1 egg into a measuring cup and then fill to the 1 cup line with milk. Add to dry ingredients and beat well. Add vanilla and lemon flavoring.
  3. Pour batter into an 8×4 inch loaf pan. Bake at 350 degrees F (175 degrees C) for 30 minutes or until a toothpick inserted into the center of cake comes out clean.

Banoffee Pie At Iba Pa

Makasaysayan sa akin ang Banoffee Pie lalo na noong nag-uumpisa pa lang ang landian (read: relasyon) namin ni Kups. Aylabit kasi ang sarap, hanggang sa naging isa sa mga peborit dessert ko na nga ‘to hanggang ngayon.

Ilang beses ko na plinano noon na gagawa ako ng Banoffee Pie dito sa bahay at salamat naman dahil noong Mother’s Day ay natiyempuhan ko na rin ang gumawa. Noong Sunday, nag-potluck kami ng sister ko at mga pamangkin dito sa bahay, and I served this.

Pasensya na kung hindi photogenic at hindi kagandahan ang pose ng Banoffee Pie ko. Hindi maganda ang pagka-slice ko dahil sa sobrang atat lang naman na makalamon na. Ni hindi ko nakunan ang buong tsura ng gawa kong Banoffe Pie 

Heniweys, para sa ingredients ng dessert na ‘to, siempre hindi mawawala ang crust. Kahit anong biscuit ay pwede mong gamitin para sa crust. Ang importante naman kasi dito ay ang feeling filling.

Ingredients:

  • 1 ready-made Graham cracker pie crust
  • 3 or more ripe bananas
  • 1 can sweetened condensed milk
  • 300 ml. cream
  • dark chocolate (shaved  for topping )

Wala akong mahagilap na ready-made Graham pie crust kaya inilabas ko ang ever-reliable mini –food processor kong kasing-edad lang naman ni Keziah.

How to make Banoffee Pie:
For the dulce de leche: You can use 1 can of sweetened condensed milk

How to make dulce de leche:
Place the can of condensed milk in a large pan and cover it completely with water. Bring the water to boil and reduce the heat to a simmer. Cook the can , turning every so often, and adding more water to cover when needed, for about 2 hours. After 2 hours, turn off the heat, let the can of condensed milk cool in the water. When the can is cool enough to touch, remove it from the pan.

Pour dulce de leche into your pie crust and let it cool.

Cut bananas into thin pieces and lay them on top of the filling.

Whip the cream and spread it over the bananas.
Dust cocoa powder and put some shaved dark chocolate on top.
Then place the pie back to the refrigerator until cold.
